Hello and happy Monday!
Y’all know I don’t like to cook — but something I actually LOVE to do is bake, even though I’m the messiest baker ever. I kind of embrace it as part of the process and let the chaos flow. There’s nothing greater than making kitchen counters sparkling clean again as you smell whatever’s baking in the oven, am I right?
Today’s banana bread recipe is one I found on Skinny Taste. Side note: Skinny Taste is one of my favorite recipe sites because Gina shows you how to make almost any recipe you can imagine, healthier. There are also a ton of recipes in all diet categories like gluten free, keto, whole 30, dairy free, vegan, etc. There is also a Skinny Taste cookbook, if you’re interested.
The reason I love this banana bread recipe is because it’s lower in calories and fat than most recipes I’ve found but tastes amazing — so moist and satisfying! I’ll note that we didn’t include the nuts when we made it, but it doesn’t need them unless you want a little extra texture/nutty flavor.
Harper LOVES to be in the kitchen. She enjoys watching cooking shows and will pretend she’s cooking using little bowls and transferring water between them. I’m trying to make more of an effort to bake with her so we can spend time in the kitchen together. She loves stirring, mixing, mashing, cracking…it’s a fun activity we can do together and I don’t mind when things get messy so it’s a win-win.
This is a super-easy recipe to make with kids, so while the prep and bake time is about 70 minutes total, that is some good quality time together!
It’s also a great option for Valentine’s Day, which is just around the corner! Make a loaf or two for your partner, to take to work, for your children’s teachers, a friend, etc. It’s such a nice sweet treat to share.
